Bacon & Sweetcorn Fritters
Brighten up breakfast and brunch with these delicious quick and easy to cook fritters.

Ingredients
For 4 people
100g self-raising flour
4 tablespoons milk
½ teaspoon baking powder
1 free range egg, beaten
2 tablespoons HP Sauce
325g tin of sweetcorn kernels
6 rashers back bacon, grilled & diced
vegetable oil for frying
Maple syrup to serve

Recipe
Make a stiff batter by putting the sieved flour and baking powder into a bowl, make a well in the centre for the egg and gradually add the milk. Beat well and then add the HP Sauce and beat for a further minute. Fold in the drained sweetcorn and diced bacon so that they are well mixed with the batter and refrigerate for 20 minutes.
Oil a griddle or heavy frying pan over a medium-high heat and spoon on tablespoons of the mixture. Cook for 2-3 minutes, turning once, until golden brown. Continue until all the mixture is used and then serve in stacks drizzled with maple syrup.
