Tuscan Picnic Loaf

Ingredients

For 6 people

1 Ciabatta loaf
250g sundried tomatoes
250g mixed peppers in oil
2 dessertspoons red pesto
100g pastrami
1 dessertspoon Marmite
2 Italian tomatoes
100g mozzarella
handful of fresh basil leaves
freshly ground black pepper

Recipe

Cut the ciabatta in half lengthways and remove a little of the soft bread in the centre to make way for the filling. Drizzle a tablespoon of oil from the sundried tomatoes and peppers over each half of the ciabatta and then spread the Marmite over each half and then the red pesto.
Taking the base of the loaf layer the sundried tomatoes, roughly chopped, then the peppers, then the pastrami. Slice the tomatoes and the mozzarella and pile them on finishing with a dozen fresh basil leaves and some freshly ground black pepper. Replace the lid of the loaf and press down firmly. You can now slice the loaf into portions and enjoy or wrap in greaseproof paper and pack in the picnic hamper. This loaf is perfect made the night before, kept in the fridge and sliced off for all the family to enjoy for lunch.
