Breakfast and Brunch in Russia - an overview

In Eastern European countries with cold climates such as Russia breakfasts tend to be substantial. Some Russians do choose coffee for breakfast but traditionally hot strong tea is popular. A variety of breads with black rye bread being the most common, blini, sausages or cured meats, eggs and cucumber pickles are typical breakfast items. The cereal Kasha is commonly eaten by children. It is not a specific type of grain and is often served with tvorog ( a soft curd cheese similar to Ricotta) or sour cream with sugar.

Bliny

Bliny is a Russian traditional dish. They are baked in a great quantity at Shrove
(carnival) - last week before Lent. Bliny making was a real sacred mystery. People told fortunes on the dough, kept their recipes of Bliny in secret. The first Bliny were put on the windowsills for poor people and pilgrims. The foreigners were very surprised at how many Bliny Russians could eat. At Shrove mother-in-law must bake a lot Bliny for her son-in-law.
The most popular Bliny were made from buckwheat flour. Good Bliny must be very, very thin.
Servings: 2-3
1 cup flour.
3 cups milk
1/2 teaspoon baking soda
2 tablespoons vegetable oil
salt and sugar to taste
2-3 eggs

Mix the eggs with the 3 cups of milk. Add salt and flour and mix thoroughly. The dough can be strained so that there are no flour lumps in it. Pour the vegetable oil into a saucer. Peel an onion and cut it into 2 halves then take one half with a fork and dip it in oil. Use it every time for greasing the pan with vegetable oil. Heat the pan and grease it. Pour a thin layer of batter evenly. Add more flour if you are not successful with thin bliny. Cook until light brown, about 2 minutes on each side.
Bliny can be served with butter, sour cream, black or red caviar, fillet of sturgeon, lox, and salmon.

Grenki


3 eggs
1/2 litre milk
1 white roll per person
oil to fry.
salt.

Grenki is a wonderful item for breakfast. They can be served with jam, cheese or sausages
Slice a roll. Beat up the eggs with milk and salt. Heat the oil in a frying pan and soak the bread slices in the egg and milk mixture. Fry the slices on both sides until light brown. Sprinkle with cheese or serve with your chosen accompaniment.


Semolina Kasha

This is a wonderful breakfast for kids and can be served with different jams, preserved fruits or honey.
1/2 cup semolina
3 cups milk
1 tablespoon butter
2 teaspoons sugar
pinch of salt

Bring the milk to the boil and gradually stir in semolina. Add the butter, sugar and salt. Bring to boil and cook on low heat for 10-15 minutes. Serve with jam, honey or fruits.

Syrniki

Syrniki are delicious small bright golden cheese balls with a melting taste of cottage cheese. They are served hot for breakfast, often with sour cream.
250g cottage cheese (tvorog)
75g oil to fry
2 tablespoons semolina flour
3 tablespoons sugar
2 tablespoons wheat flour
2 eggs

Combine all the ingredients, except the flour, and knead until you have a stiff dough. Shape into small balls and roll in flour. Fry in oil for 3-4 minutes turning on all sides until bright golden.
